Easy Meal for when you're cooking for 2.
2 boneless, skinless chicken breasts
1 teaspoon salt
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon dried rosemary
2 medium sweet potatoes
2 tablespoons olive oil
1 tablespoon fresh chopped rosemary
2 cups fresh spinach
Salt, to taste
In a bowl, mix together 1 teaspoon salt, paprika, garlic powder, and 1 teaspoon dried rosemary. Rub mixture onto chicken breasts.
Peel and chop sweet potatoes into 1/2 inch pieces. Toss with 2 tablespoons olive oil, 1 tablespoon chopped rosemary, and salt.
Heat grill to medium-high heat. Place chicken breasts on the grill and cook for 6-7 minutes per side, or until fully cooked.
In a separate foil pouch, add sweet potatoes to the grill and cook for 15-20 minutes, or until tender.
In the last 2 minutes of cooking, add the spinach on the grill and let it wilt.
Serve the chicken with the grilled spinach and sweet potatoes. Enjoy!
