Savory Grilled Chicken with Spinach & Rosemary Sweet Potatoes for 2

Easy Meal for when you're cooking for 2.


  • 2 boneless, skinless chicken breasts

  • 1 teaspoon salt

  • 1 teaspoon paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon dried rosemary

  • 2 medium sweet potatoes

  • 2 tablespoons olive oil

  • 1 tablespoon fresh chopped rosemary

  • 2 cups fresh spinach

  • Salt, to taste


  1. In a bowl, mix together 1 teaspoon salt, paprika, garlic powder, and 1 teaspoon dried rosemary. Rub mixture onto chicken breasts.

  2. Peel and chop sweet potatoes into 1/2 inch pieces. Toss with 2 tablespoons olive oil, 1 tablespoon chopped rosemary, and salt.

  3. Heat grill to medium-high heat. Place chicken breasts on the grill and cook for 6-7 minutes per side, or until fully cooked.

  4. In a separate foil pouch, add sweet potatoes to the grill and cook for 15-20 minutes, or until tender.

  5. In the last 2 minutes of cooking, add the spinach on the grill and let it wilt.

  6. Serve the chicken with the grilled spinach and sweet potatoes. Enjoy!
