Oodles of Zoodles with Meatballs

  • 1 lb ground turkey

  • 1 medium zucchini, spiralized into noodles

  • 1/4 cup breadcrumbs

  • 1/4 cup grated Parmesan cheese

  • 1 egg

  • 1 tsp minced garlic

  • 1 tsp dried basil

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1 tbsp olive oil


  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.

  2. In a large bowl, mix together the ground turkey, breadcrumbs, Parmesan cheese, egg, garlic, basil, salt, and pepper.

  3. Roll the mixture into golf ball-sized meatballs. Place on the prepared baking sheet.

  4. Bake for 20-25 minutes, or until fully cooked and browned on the outside.

  5. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the zucchini noodles and cook for 3-5 minutes, or until slightly softened.

  6. Serve the meatballs on top of the zucchini noodles. Enjoy!
