1 lb ground turkey
1 medium zucchini, spiralized into noodles
1/4 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 tsp minced garlic
1 tsp dried basil
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
Preheat oven to 400°F. Line a baking sheet with parchment paper.
In a large bowl, mix together the ground turkey, breadcrumbs, Parmesan cheese, egg, garlic, basil, salt, and pepper.
Roll the mixture into golf ball-sized meatballs. Place on the prepared baking sheet.
Bake for 20-25 minutes, or until fully cooked and browned on the outside.
Meanwhile, heat the olive oil in a large skillet over medium heat. Add the zucchini noodles and cook for 3-5 minutes, or until slightly softened.
Serve the meatballs on top of the zucchini noodles. Enjoy!
