Grilled Shrimp over Mushroom Spinach Rice

About the Recipe

Preparing meals during a busy work week can be hard, but luckily there are so many amazing recipes out there that are both easy to make and delicious.


Grilled Shrimp:

  • 1 lb large shrimp, peeled and deveined

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 tsp paprika

  • 1 tsp dried basil

  • Salt and pepper to taste

Mushroom/Spinach Rice:

  • 1 tbsp butter

  • 1/2 cup chopped onion

  • 1 cup sliced mushrooms

  • 2 cups cooked rice

  • 1 cup chopped fresh spinach

  • Salt and pepper to taste



  1. In a large bowl, combine the shrimp, olive oil, garlic, paprika, basil, salt, and pepper. Toss to coat the shrimp evenly.

  2. Heat a grill or grill pan to medium-high heat. Grill the shrimp for 2-3 minutes on each side or until pink and cooked through.

  3. For the rice, melt the butter in a saucepan over medium heat. Add the onion and mushrooms, and cook until the onion is translucent.

  4. Stir in the cooked rice and spinach, and cook until the spinach has wilted. Season with salt and pepper.

  5. Serve the grilled shrimp on top of the mushroom/spinach rice. Enjoy!
